Tasty No Fuss Beef Enchiladas

Enchiladas are a family favorite! and can be made ahead of time which makes them even easier to pop in the oven after a long day of work!


What will you need?

1 LB of Ground Beef

Yellow or Red Pepper

Onion

Salt

Pepper

Tortillas

1 tsp. Paprika

1 tsp. Cumin

1 tsp. Garlic Powder

2 cups of Mexican Shredded Cheese

Enchilada Sauce (see my homemade sauce recipe)

A few Cherry Tomatoes or 1 small tomato


In a frying pan over medium heat add your ground beef, start to break up the meat while it cooks. When the meat is halfway cooked (meaning that you only see half of the meat still raw/pink)


Start to add the spices, chili + garlic powder, paprika, cumin, and keep stirring the ground beef until it is fully cooked and you no longer see any pink meat.


Drain the excess oil from the pan and place the meat on a plate for assembling.


Grab a 9x13 pan, spray lightly with oil.


Time to Assemble!


Grab a tortilla and start putting your meat from top to bottom of the tortilla. Then sprinkle cheese covering the beef.



Wrap the tortilla that the seam is facing down in your pan.


And continue to assemble until the pan is full.


If you are like me, you like your enchiladas crispy. (You can skip this step if you like them softer). Lightly spray the top of the tortillas with oil and place in the oven on broil for 2-3 minutes. Make sure you watch your oven because every oven is different.


Note: Make sure your pan is broil-proof if it is not. you can bake the enchiladas on 375 for 5-8 minutes. They are done when they start to have little brown spots (shown above).


While the enchiladas are cooking - grab your trusty dicer*, or start to dice a little tasty topping.


1 Pepper (any color, orange or yellow are my favorite because they are sweeter)

1 onion

Few cherry tomatoes or 1 small tomato

Add Salt and Pepper



I added little green chilies (because I like a little spice, but this is optional!)


Time to finish the assembling! Take the Enchiladas out of the oven. Add 1/2 of your enchilada sauce, 1 cup of shredded cheese, and then 1/2 of your diced mixture.


Now to finish off with the rest of your enchilada sauce, the rest of your cheese, and diced mixture.


Cook in the Oven at 350 for 20 minutes. (uncovered)
