Greek Yogurt Mac & Cheese

Lighten up & add protein to your favorite Mac & Cheese with the addition of Greek Yogurt! I love the tang greek yogurt gives to Mac & Cheese! I also always have deli cheese on hand; cheddar, American, or provolone. In this recipe, I used my sliced cheese and dice it up. I used cheddar in this recipe, but you can add any of the ones mentioned! Be creative, add your favorite. I love pepper jack too!

Start by dicing up your onion. Once you have finished dicing up your onion, place your frying pan over medium heat with butter. Cook until the onion is translucent, about five to seven minutes.


Then add your onion until it is fragrant, about one minute.


Now add your flour lightly over the onions, mix the flour in well. Once you are done mixing, add your broth to the frying pan. Add one cup at a time, mixing well in between cups. Allowing time for each cup of broth to thicken and lightly boil. This step will take about 10 minutes, adding each cup every 3 or so minutes.


Now it's time to add in the cheese, again we will be doing this in steps as well. Turn down the heat to low heat.


Let's add in the diced cheddar cheese first. Stir well, and wait at least 3 minutes before continuing to the next step. Mixing frequently will prevent clumps in your sauce.


Time to cook the pasta as per instructions on the box. It is very important to add salt and oil to your pasta water, as we will be reserving 1 cup of starch water. This means before you strain your pasta, pour 1 cup into a measuring cup for later.


Add the parmesan cheese, chili powder, greek yogurt, mustard powder, salt, pepper, and then mix the sauce well.


While your sauce is simmering, add a sleeve of ritz crackers to a ziplock and crush.


Preheat oven to 350 degrees.


Now the final cheese to add, add in your shredded Mexican cheese.


Add salt and pepper to taste.


Once your pasta has finished cooking, add the pasta to the cheese sauce. Stir well. Add in starch water 1/4 cup at a time.


I typically only add 1/4 cup of starch water, but if I am making it to cook later, I will add in another 1/4 cup of starch water, this will prevent your cheese sauce from drying up.


If you used a cast iron skillet*, or another pan you can put in the oven skip the next step.

Transfer your macaroni and cheese into an oven-safe container, add and spread lightly 1/2 cup of crushed ritz crackers on top of the macaroni and cheese.


Spread a 1/2 cup of fried onions on top, followed by another 1/2 cup of fried onions.


If you have any extra cheese, spread lightly on top.


Bake for 5 to 10 minutes until the top starts to brown.
