Leftover Potato Breakfast Scramble

Have left-over roasted potatoes from dinner? What to do with them? They are the perfect addition to your morning breakfast scramble!

What will you need

A 1/2 cup of leftover Roasted Potatoes

4 eggs

1/2 cup of shredded cheese (any blend will work)

1 pepper (prefer red, orange or yellow)

Salt + Pepper

Splash of milk

sriracha (optional)

Dice up your pepper and place in a non-stick frying pan on medium heat for 3-4 minutes.


Once your peppers start to brown, it is time to add in your leftover potatoes.

Stir and cook for another 2-3 minutes while they reheat.


In a bowl crack your eggs, add a splash of milk, and season with salt and pepper.


Scramble with a fork (the yolks should be broken up)


Add eggs to frying pan cook for 1 minute then add cheese.


When scrambling eggs you must be on top of them with stirring. You do not want to burn your eggs.


Your eggs will be fully cooked within 2-3 minutes. How do you know they are cooked? They will not look wet and be runny.


Add all your favorite toppings! sriracha is my favorite topping!!
