Taco Bake

Is it a taco bake or is it a taco lasagna or as my husband would say it is chili meats a taco? Whatever you want to call it, it is delicious! This is a newer meal in our household, and it came about when I was working from home, had a million things to do, and needed to put dinner on the table. Who hasn't had one of these nights? This Taco Bake reheats for leftovers very well too! I love that it is truly customizable to your family's preferences or what ingredients you have on hand

Taco Bake


Start by cooking the ground beef and the onions on medium heat in any pan of your choice!

The tool I am using in the photo is a ground beef chopper* (this is an affiliate link and I may earn a commission) I find it helps to break up your ground beef or turkey.

Cook and break up for 5 to 8 minutes.

Once your ground beef is beautifully brown, it is time to drain the excess oil and fat. This is important or your filling will be greasy, and no one wants that!

Once you have completed that step! Now let's add a can of tomato sauce, corn, and black beans.

Stir well, lower the heat to low heat, and allow your filling to heat up. After 3 to 4 minutes to add in the spices! A taco bake needs true taco seasonings and a little heat in my opinion ;) Add in the chili powder, southwest seasoning, cumin, paprika, salt, pepper, and red pepper flakes. Stir and allow to cook on now for another 3 minutes, allowing the flavors to blend.

Preheat the oven to 375

Now it's the fun time! let's assemble the Taco Bake!

Grab a can of your refried beans!

Spread two spoonfuls on the bottom of the pan, try and cover the bottom of the pan the best you can.

Now add a layer of your TACO Filling, I would add a solid layer to cover the bottom of the pan, about 1/4 inch thick. Remember there is no wrong way to do this, it will come out scrumptious!

Now add one tortilla broken up into four parts. I have tried to make this recipe without breaking it up and I found without cutting the tortilla, it was messier when you went to cut the taco bake to serve.

Now, it's my favorite addition, Cheese! Add enough cheese to cover the tortillas! Continue by adding your Taco Mixture again!

Layer another broken tortilla, this time ontop you will put two spoonfuls of refried beans, spread out the best you can on the tortillas.

Add the last layer of taco filling and top with Cheese!!

Time to cook this beauty! Add to the oven and cook on 375 for 30 minutes!

What do you need?

2 lbs of Ground Beef (You can swap Turkey too!) 1 large onion diced

1 can of corn

1 can of black beans

1 can of tomato sauce

1 can of refried beans

2 cups of shredded Mexican Cheese

Salt + Pepper

2 flour burrito tortillas

1 teaspoon of Chili Powder

1 1/2 teaspoons of Southwest Seasoning

1 teaspoon of Cumin

1 teaspoon of Paprika

1/2 teaspoon of red pepper flakes (can add more)
